Chef Michael Lewis of KYU

Join us as we welcome Chef Michael Lewis from KYU ‘In the Kitchen’.
Chef Lewis’ class will include instruction on basic knife skills, searing and methods of plating as students execute two tuna-based dishes: a tuna tataki and tuna tartare. Students will start with the basics as they learn how to properly break down a two-pound section of tuna loin before re-creating KYU’s Tuna Tataki. In line with Chef Lewis’ sustainable practices, guests will then use the surplus tuna to create a tartare dish plated on lettuce wraps before finishing the evening with a “meet and eat” with the chef.
